Ingrediënten:
650 g champignons
150 g ontpitte zwarte olijven
400 g ui
3 teentjes knoflook
olie
2 tl sojasaus
5 tl rijstgriesmeel

1 prei
4 dl sojaroom
1 el citroensap
peper en zout
Bereiding:
Verwarm de oven voor op 180°C. Reinig de champignons zonder ze te bevochtigen. Snijd de champignons in schijfjes en hak de olijven. Pel en snipper 300 g ui en 2 teentjes knoflook.
Stoof de ui glazig in wat olie. Voeg de knoflook, de olijven en de champignons toe en laat alles gaar stoven met het deksel op de pan.
Voeg de sojasaus toe en kruid met peper en eventueel nog wat zout. Roer het rijstgriesmeel door het kookvocht zodat alles wat bindt.
Pel en snipper 100 g ui en 1 teentje knoflook. Snipper het wit van de prei. Stoof alles even aan in wat olie, giet de sojaroom erover en kruid met citroensap, peper en zout.
Vul de cannelloni met het champignonmengsel en schik ze naast elkaar in een ingevette ovenschaal. Verdeel de saus erover.
Bak de cannelloni 30 minuten in de oven.
